Unusual combo but we don't have much choice in Arnamurchan plus we bought the amazing rainbow chard just today directly from a veg grower. Added crispy kale for texture, taste and fun. Bloody delicious.
We love food and I love cooking. Then my husband was told he had MS. Soon after he decided to rule all saturated fat out of his diet, after reading Dr Jelinek's book 'Overcoming Multiple Sclerosis: An Evidence-based Guide to Discovery'. This blog is my way of remembering all the best things I've managed to dream up for us to eat since February 2015. #aquavegansrule To get in touch please email charlottelloydowen@yahoo.co.uk

Non-dairy fish pie, believe it or not!
First time I've attempted a white sauce with cashew butter/flax oil, flour and almond milk but it worked! It tasted quite nutty at first but less so once I added lemon juice and then baked it with the cod plus sweet/potato mash with scattered rosemary. Harry had seconds so couldn't have been bad. I thought it was a good light alternative.

Smoked mackerel and 3 pulse salad with crispy kale
Kale crisps fast so need to watch the burn but it's a really nice texture with a mushy salad. This had sesame seeds and pine nuts in it too.

This was all a bit Mexican with cacan spiced sweet potato, tomato salsa and guacamole. Very satisfying and a bit different.
