Courgette, mint and lentil salad with beetroot hummus and falafels


Beetroot hummus had toasted fennel seeds, cumin and flax oil added. The salad was so fresh tasting - good old Ella's ideas there. I used sprouted lentils and mixed seeds toasted with soy sauce. Very tasty washed down with some rose on a fri night!
